In our newsletter a couple of weeks ago, we discussed mindful eating and it’s relationship to your yoga practice. We also shared with you some tips of what to eat around your personal practice. So today, we wanted to share with you one of our favourite yogic treats – coconut energy balls; a great healthy pre-yoga snack!
coconut energy bites
makes about 20 small portions
1/2 cup (100g) pitted dates
2 tbsp coconut nectar
1/3 cup (45g) plain mixed nuts
1/3 cup (30g) oats
2/3 cup (60g) desiccated coconut
1 tsp raw virgin coconut oil
- Add the dates, coconut nectar, nuts, oats, desiccated coconut and coconut oil into a food processor. Then, blitz everything together for a few minutes until a sticky crumb consistency has formed.
- When the mixture is ready, take a tiny handful and press it into a ball shape. Then, repeat until all of the mixture has been used. The amount you make depends on the size you choose to make the bites.
